Meat based fillings work equally well provided the mixture is finely ground and not too wet, as excess moisture will soften the pasta walls during cooking and make sealing much harder. Press firmly around each mound of filling, working outward from the filling to push out any trapped air. Air pockets cause the pasta to balloon and burst in the water. Cut between the portions using a sharp cutter or a knife, then press the edges firmly once more to ensure a secure seal.

Cooking stuffed pasta requires a generous pot of well salted boiling water and close attention. Fresh stuffed pasta cooks much faster than dried, and the pieces are ready as soon as they float to the surface and have spent another minute or so in the water. Lift them out gently with a slotted spoon rather than pouring through a colander, which can break the seals and lose the filling.
